Plenty of Montreal bars have a cocktail menu. Fewer have one with the Nightporter on it.
That's a Zacapa Solera 23 rum, Genmaicha tea, cognac, and ruby port. It's dark, herbaceous, spirit-forward. The kind of drink a bartender makes when they're not trying to impress anyone, just trying to make something worth finishing slowly.

The Signatures are where the bartenders show their thinking. Diana's opens with brown butter vodka, Champagne, and white peach. The Rango Punch goes Roku Gin, mango, toasted rice, and coconut whey: tropical and nutty, built around texture as much as flavour. The Maverick is mezcal and ancho pepper, smoky and entirely committed to its own point of view.

The Classics are where Bowie's palate shows most clearly. The Hot Honey Tommy's Margarita runs Hornitos Reposado, habanero honey, and Szechuan pepper: heat that builds, not burns. The Solway Cosmo uses Aupale Vodka, sour cherry, vanilla, and cherry blossom. It's recognisable and completely unlike what you'd expect from the name.

Five Martinis on the list, each one a distinct direction. The Duke's runs Belvedere, saffron, dry vermouth, Yuzushu, and smoked Maldon salt. The Dirty swaps in Bombay London Dry, Castelvetrano olive brine, and koji for something savoury and serious. The Tomato Martini: gin or vodka, tomato water, plum vinegar, black pepper, is the bar's most committed curveball.

Three options, three different spirits. The Canadian uses Canadian Whisky with Demerara and Angostura; clean and familiar. The Japanese is Suntory Toki with hinoki and lemon essence, quietly the most interesting of the three. The Oaxacan splits Patrón Reposado and Del Maguey Puebla Mezcal with agave and mole bitters.

For a first visit, the Signatures are the clearest window into what Bowie actually does. Order Diana's or the Red Velvet: reposado tequila, grapefruit, Lillet Blanc, pandan, and red wine, and you'll understand the program faster than reading the whole menu. Best Time to Go
The cocktail experience changes depending on when you arrive. Earlier in the evening runs quieter: better for working through the menu with intention. Later on Thursday through Saturday, the room settles into something different. The playlist stretches, the pace slows, and the Nightporter starts making more sense.
Champagne and Bottle Service
Bowie carries a serious Champagne list alongside bottle service for the full bar program. Champagne by the glass starts at $36. The bottle list includes Veuve Clicquot, Bollinger, Ruinart, Dom Pérignon, and Krug Grande Cuvée. Bottle service is available for Scotch, tequila, vodka, and gin; pricing varies by selection.
